Certified Food Service Managers

State codes require food service establishments to be under the operational supervision of a full-time, certified food service sanitation manager.

Certification comes from successful completion of courses and exams approved by the Illinois Department of Public Health. State regulations mandate the number of certified sanitation managers required on staff at an establishment determined by risk factor.

All certified food sanitation personnel are required to have completed a 5 hour continuing food safety education training before renewing their certification, or they must pass a food safety exam.
